
Ok. So we all know that any holiday meal leaves us with plenty of leftovers. What are we to do with all those leftovers?!? I LOVE leftovers because they can mean a whole new meal if you have just a little inspiration!
Do you have leftover turkey? Veggies from your veggie tray? Here is an amazing soup you can make with those leftovers and some additional ingredients!
Creamy Turkey and Vegetable Soup
Ingredients:
Cream: 1/2 cup blended cashews
1/2 cup blended cauliflower
Vegetable Stock: 1 medium onion
3 celery stalks
2 large carrots
1 Tbsp garlic powder
1 tsp Himalayan pink salt
1-2 tsp dill
1-2 tsp rosemary
2 cups chopped turkey meat
Directions:
Chop veggies and add to post of water on the stove. Add seasonings for the stock. Bring to a boil then simmer until veggies are soft.
In the meantime, blend the “cream” ingredients with just enough water to make it liquid. Add to pot of simmering stock and stir.
Finally add in turkey meat. Simmer together 30 minutes. Serve hot.
