During the holidays we often set aside our ideas of eating for health. Let’s be honest, it is much “easier” to do this than go through all we must for a “healthy” meal. I like to reconstruct old standards to make them better options.
My favorite holiday dish has always been green bean casserole. My aunt made it for the family gatherings every year. I look forward to eating it to this day! The following recipe will be tweaked yet again this year, so be watching for the newest version of my old favorite around Christmastime (the newest version promises to have breaded onion topping). But, for now, I hope you enjoy this one.
Green Bean Casserole
Ingredients: 2 cups green beans
1 1/2 cups blended *cauliflower
1/4 cup chicken broth
1/2 tsp garlic powder
1 thinly sliced onion
Sautee onion in pan. Pulse green beans in food processor until shredded like French style beans. Pour rest of ingredients into a casserole dish and put the onions on top of the casserole.
Bake in oven at 350 for 15-20 minutes.
Serve hot with love.
